Red Velvet Cake

Hello friends, it’s been a while. I apologize for the length betweens post, but life has been crazy. The past month has been full of exciting changes, namely – I started a new job in a new city!

In a fantastic turn of events, I got the kind of job I’d been wanting since graduating college, and in the span of 2 weeks had to find a new place to live, pack up all my stuff, and move. While terribly exhausting and stressful, a lot of things fell nicely into place and I couldn’t be happier with where I am.

Chocolate Espresso Madeleines

I love baking. That’s why I started Pretty Damn Delightful. I also really enjoy photography, however I’ve been feeling like I’m not quite at the level I want with my food photos. I’m really happy with how a lot of them turn out, but I feel I’m shy of where I want to be. Fortunately, there’s a relatively easy solution and that is to just keep working at it. Keep photographing and playing around with styling/lighting/etc. Which is the plan!

Chocolate Raspberry Mascarpone Cupcakes

These cupcakes might be the best thing I bake. My family would definitely say so. They’re my signature item, my go-to when I need something great.

These were one of the first times I really played around with a recipe, and made it my own. They developed from a delicious chocolate mascarpone cupcake recipe I’d discovered during my senior year of high school, when I did a baking project at the end of the year. I was making them one time later on, and decided to try baking some with raspberries right in the middle. I don’t remember what inspired this decision, but wow did it work out.

Chocolate Merlot Cake

I have mixed feelings when it comes to birthdays. For others, I love planning something special and making it a great day. But when it comes to my own, I’m just not crazy about it. There’s this odd societal pressure for it to be this really amazing day, when really it’s no different then the next.

That’s not by any means to say I had a bad birthday this year though! I celebrated with friends I adore, and ate a lot of food and baked goods. My friends baked for me, and all succeeded delightfully!

Overnight Chocolate Cinnamon Rolls

One of my favorite things about bread is how versatile it can be. You can take a basic dough recipe and add any number of fillings and it will be amazing. You can shape it in a braid, or a simple loaf, or cut it into individual rolls. I’ve been looking for a simple overnight dough recipe for a little while, and also craving big, fluffy cinnamon rolls. I was also feeling bit lazy, and didn’t want a dough I had to shape the night before. This recipe ended up being perfect, and turned out exactly how I wanted!

French Chocolate Cake

One of my favorite desserts growing up was a Belgian Brownie from Le Pain Quotidien. They are chocolatey, cakey and each one was just big enough to really excite an 8-year-old. They’re extremely nostalgic for me, and tasting this cake brought me right back. It’s hard to decide if this counts as more of a cake or a brownie – but really, who cares? It’s absolutely delicious and that’s all that matters.
