Red Velvet Cake

Hello friends, it’s been a while. I apologize for the length betweens post, but life has been crazy. The past month has been full of exciting changes, namely – I started a new job in a new city!

In a fantastic turn of events, I got the kind of job I’d been wanting since graduating college, and in the span of 2 weeks had to find a new place to live, pack up all my stuff, and move. While terribly exhausting and stressful, a lot of things fell nicely into place and I couldn’t be happier with where I am.

Favorite Photos

Life has been busy recently, and inspiration hard to find. Things have been moving, in flux, and my baking and photographing motivation hasn’t been there. Working creatively is like this for me, it ebbs and flows, and there are times when I’m more inspired than others. I’m hoping that life will settle soon, and I’ll be back to spending most waking hours working on baking projects.

Chocolate Espresso Madeleines

I love baking. That’s why I started Pretty Damn Delightful. I also really enjoy photography, however I’ve been feeling like I’m not quite at the level I want with my food photos. I’m really happy with how a lot of them turn out, but I feel I’m shy of where I want to be. Fortunately, there’s a relatively easy solution and that is to just keep working at it. Keep photographing and playing around with styling/lighting/etc. Which is the plan!

Tiramisu Layer Cake

Let me start out by acknowledging this might not be the prettiest cake I’ve ever made. I was overeager and poured the ganache while it was still a tad too warm, and ended up having to do a second pour…so not the cleanest and nicest of drips. I also have a fear of soggy cakes, and tend to undersoak with the coffee mixture, so it’s not quite as visible as I would have wanted. But the taste is there and still damn delightful and I think that’s all that really matters.

Chocolate Raspberry Mascarpone Cupcakes

These cupcakes might be the best thing I bake. My family would definitely say so. They’re my signature item, my go-to when I need something great.

These were one of the first times I really played around with a recipe, and made it my own. They developed from a delicious chocolate mascarpone cupcake recipe I’d discovered during my senior year of high school, when I did a baking project at the end of the year. I was making them one time later on, and decided to try baking some with raspberries right in the middle. I don’t remember what inspired this decision, but wow did it work out.
